Fava Bean Salad

A note from Chef Han:

This is a refreshing salad that can be easily whipped up any time – but I enjoy it most on warm summer days. Double or triple the recipe for a crowd and then, relax. Enjoy the season because autumn always comes too fast!

Ingredients:

  • 1 cup fava beans, blanched and shucked
  • 1 cup sugar snap peas, blanched and cut in half 
  • 2 sprigs of mint, chopped
  • 2 sprigs of basil, chopped
  • 1/2 cup feta cheese, diced
  • 4 tablespoons olive oil
  • 4 tablespoons lemon juice
  • 1/2 cup croutons
  • Salt, to taste

Combine all ingredients in a bowl and serve immediately.
