Marinated Salmon Canape with English Cucumbers and Horseradish Mousse

  • 1 Gravlox, sliced 1/8″ thin
  • 8 slices Nature’s Pride© 12 Grain Bread For English Cucumbers:
  • 4 English cucumbers
  • 1/2 cup dill
  • 1 tablespoon salt
Recipe Instructions: 

Preparation of Cucumbers:

  1. Peel cucumbers, slice in half lengthwise and remove any seeds with tip of spoon.
  2. Slice very thin on a mandolin. In a large bowl toss cucumbers with salt. Allow time for salt to draw out the water in cucumbers.
  3. Place cucumbers in cloth napkin and squeeze dry.
  4. Toss cucumbers with chopped dill. Refrigerate.

Preparation of Horseradish Mousse:

  1. Mix grated horseradish with crème fraiche and season with salt (If using store bought horseradish, drain excess liquid before mixing).
  2. Let horseradish infuse, until ready to whip.

Assemble Canapes:

  1. Lay 4 pieces of salmon (slightly overlapping) on each of the 8 slices of bread.
  2. Cut each slice of bread into thirds.
  3. Strain horseradish mousse through a fine sieve and discard horseradish.
  4. In a medium size bowl whip mousse until stiff peaks form.
  5. Place English Cucumbers on top of salmon, and then finish with horseradish mousse.
