Espresso & Fennel Steak Rub

  • 3 oz. Spanish paprika
  • 1 oz. cumin seed, toasted and ground
  • 1 oz. black mustard seed, toasted and ground
  • 1.5 oz. fennel seed, toasted and ground
  • 1 oz. black peppercorn, ground
  • 2 oz. kosher salt
  • 4 oz. espresso bean, freshly ground
Recipe Instructions: 

Toast and grind the cumin seed, mustard seed and fennel seed. Mix all ingredients together well. Press steak firmly into spice mix, coating well all sides and refrigerate for 6 hours. Sear steak and cook to desired temperature.
